Today I found an amazing recipe for something that I could make ahead and take to work for a couple of weeks. I am excited to share with you how to make this amazing and healthy meal!!

First pick out what veggies you want to put into the bake...
I chose broccoli, spinach, tomato, red onion and bell peppers.
Cut all of them up and put them in a 9x13 pan that was lightly coated in coconut oil.
Then mix up about 15 eggs (I used about 14 egg whites and then 2 regular eggs) Then I added some cottage cheese for some extra protein and texture. Pour this mixture over the veggies in the pan.
Then bake at 350 degrees for 30-45 minutes.

I found that using egg whites it took a little longer, it might have also been the moisture from the spinach.
