For my little cousins birthday, I wanted to make a cake (even though the smell and sight of sugar would make me sick because I can't have it) a cake that would be delicious and look pretty for everyone else! So I decided on the Italian Creme Cake (recipe below) Also, an amazing discovery came from this baking experience.. When making a layer cake you have to bake two round pans and then stack them on each other, only to have a huge gap to fill because of the bump that happened during the baking process..I did some research on this and found these neat wrap things you wrap around the cake pans while baking to prevent this. Not only did the cakes come out flat yet still fluffy.. they came out nice and golden instead of really browned.. As seen in the picture below. The two on the left had the wraps. It was really cool to see it had worked!
Then here is the finished, frosted product with Cream Cheese frosting(recipe below too)
Italian Cream Cake~~~
Ingredients~
1 stick margarine
2 cups flour
2 cups sugar
1 cup buttermilk
1/2 cup flaked coconut
5 egg whites
1/2 cup shortening
5 egg yolks
1 teaspoon baking soda
1 teaspoon vanilla
1 cup chopped pecans or walnuts
Cream Margarine, shortening and sugar. Add egg yolks and beat well.
Combine soda and flour: add to creamed mixture alternately with buttermilk.
Stir in vanilla, add coconut and nuts. Fold in egg whites.
Pour into 3 greased and floured round cake pans.
Bake at 350 degrees for 25-30 minutes.
Cream Cheese frosting~~1 pkg. cream cheese (8oz.)
1 lbs. powdered sugar
3/4 stick margarine
1/4 teaspoon vanilla
Beat cream cheese and marg. until smooth. Stir in powdered sugar and add vanilla.
Stir until smooth. Spread on the cake and between the layers.
